Bikini Recipe

Serves 10 servings

To make the Citrus Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

Ingredients for the Premix (makes 850ml, enough for 10)

400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch

Method

For the Cordial: Put every ingredients inside a pot, bring to a gentle boil, mixing until the sugar dissolves. Then, turn off the burner allowing it to reach room temperature completely. Pour to a clean bottle, close it and refrigerate it chilled, it can be stored for up to four weeks.

Preparing the Cocktail Base: Mix all the spirits and syrup in a large bottle, let it rest for an hour, then filter it best through cheesecloth, so it's fully clarified.

When ready to serve: Measure 85ml from the premix into your cocktail shaker packed with ice, and agitate carefully for a minute until cold. Filter to a chilled martini glass or similar, top with the cranberries and complete it by giving it a quick spritz of mandarin oil over the drink.
